The Challenge: Go Vegan for One Day A Week!

As my fellow Starfish writer and foodie, Davey Hamada, discussed in his post on following a sustainable diet, veganism is THE least carbon dependant diet currently available. As a committed ‘plant based’ eater myself, I was thrilled to see the discussion of the “V” word in relation to environmental consciousness. However, many of you non-vegans out there may be wondering... what the heck do vegans eat?

So, I’ve decided to give our readers an easily followable, environmentally friendly, totally plant based example one day meal plan. I understand we’re all students, and that not all of us may have maca root or kamut pasta just laying around in our kitchens, so everything will be 100% accessible and REALISTIC!

The challenge I pose to our readers is this: go beyond the idea of “Meatless Mondays” and instead follow a plant based diet for ONE day a week. Just one day a week, no biggie right? That one day a week committed to a plant based diet, as Davey reported, is the equivalent of reducing your carbon footprint by the amount of carbon required to drive 1, 860 km over the course of a year! That’s incredible! Small changes can have significant results!

Where your budget allows, obviously go organic on as many ingredients as you possibly can! This will increase the environmental friendliness of your plant based day :)


  • Plain Instant Oatmeal
  • 20 almonds
  • ½ cup fruit of your choice (go with what’s cheap and in season! Apples, berries, bananas, etc!)
  • Cinnamon to taste
  • 1 tbsp maple syrup (if you have it J)

*Cook oatmeal and mix in remaining ingredients!


  • 1 toasted pita
  • ½ cup Hummus
  • Sliced veggies (red pepper, cucumber, cherry tomatoes, carrots, celery, etc)
  • 1 Banana

*Dip Pita and Veggies in Hummus.


  • Natural Peanut Butter
  • 1 Sliced Apple


  • 1 – 1 ½ cups of whole wheat pasta      
  • 2 Garlic cloves
  • ¼ cup Basil
  • ½ cup white OR red onion
  • Pepper & Salt
  • 1 tbsp Olive Oil

*Heat oil, onion and garlic in a small sauce pan on low-medium heat for 2 minutes, stirring frequently. Then add basil, tomatoes, salt and paper and heat for another 5 – 8 minutes. Boil pasta for 8 – 10 minutes and drain. Combine & Enjoy :) Serves 2.
